Recipe: Tiny Isle Lilikoi Mac Nut Dressing

I posted a quick video of me making this tropical-themed salad dressing. This is typical of the kind of quick-simple dressing we use on freshly-harvested edible greens from the garden or farmer's market.

Tiny Isle Lilikoi Mac Nut Dressing

Ingredients

2 tbs. rice wine vinegar
1 garlic clove, pressed
1/2 tsp. hawaiian sea salt
2 tbsp. Tiny Isle toasted or raw macadamia nut butter
2 tsp. honey
2 tbsp. fresh lilikoi (passionfruit) juice
3 tbsp. avocado oil

Method

  1. Smash and chop or press the garlic clove into a bowl
  2. Add vinegar and salt, and using a whip, mix well
  3. Add mac nut butter, honey and lilikoi juice, mix well
  4. Whisk in the avocado oil and it’s ready

Tossing the salad with the dressing before serving is a great way to make sure it is not over- or under-dressed!

This makes enough for 4-6 servings.
