I posted a quick video of me making this tropical-themed salad dressing. This is typical of the kind of quick-simple dressing we use on freshly-harvested edible greens from the garden or farmer's market.
Tiny Isle Lilikoi Mac Nut Dressing
2 tbs. rice wine vinegar
1 garlic clove, pressed
1/2 tsp. hawaiian sea salt
2 tbsp. Tiny Isle toasted or raw macadamia nut butter
2 tsp. honey
2 tbsp. fresh lilikoi (passionfruit) juice
3 tbsp. avocado oil
- Smash and chop or press the garlic clove into a bowl
- Add vinegar and salt, and using a whip, mix well
- Add mac nut butter, honey and lilikoi juice, mix well
- Whisk in the avocado oil and it’s ready
Tossing the salad with the dressing before serving is a great way to make sure it is not over- or under-dressed!
This makes enough for 4-6 servings.
